Answer:

Currently there isn’t a way in Wishlist Member to get notified when some cancels his membership.

You can get an email when some unsubscribes from an email list and you can set it in Wishlist Member -> Settings -> Email Settings.

When some cancels the their subscription, the membership level is canceled, you can choose if you want the member to also be removed for the mailing list.

This can be set up in Wishlist Member -> Integration -> Autoresponder.

Near each level you have the option to decide what will happen if someone is cancelled for a membership level.
